Miso caramel and apple pie

The secret to this apple pie is the delicious miso caramel. The miso caramel’s flavour provides both umami and sweetness, taking the apple pie to the next level!

Ingredients

3 (500 g) apples

1 dl pecan nuts

Base

150 g butter

1 dl sugar

1 tsp vanilla sugar

3 dl wheat flour

1 tsp baking powder

Miso caramel

1 pack (2 dl) whipping cream

2 dl brown sugar

2 tbsp miso paste

  1. Make the caramel. Boil the cream and sugar in a saucepan and simmer for about 10 minutes until the mixture thickens. Stir occasionally. Remove the saucepan from the stove and mix the miso into the saucepan.

  2. Make the base. Melt the butter. Mix the sugar with the butter. Mix the flour and quickly mix them it the butter-sugar mixture. Press the dough onto the bottom and edges of the greased pie dish (diameter 24 cm).

  3. Wash the apples and peel if desired. Remove the cores and slice the apples. Crush the nuts.

  4. Spread half the caramel on the pie base. Lay the apples on top of the caramel. Mix half the remaining caramel into the crushed nuts and spread the mixture on top of the pie. Bake in an oven at 200 °C for about 30 minutes until the pie is ready. Cover with baking paper if the surface browns too much.

  5. Serve the pie with the rest of the caramel.
