Roasted cauliflower and Parmesan butter

The richness of the Parmesan butter gives nuance to the flavour profile of the golden brown and crispy roasted cauliflower. The garlic makes for an enticing aroma.

Ingredients

1 (700 g) cauliflower

Parmesan butter

5 cloves of garlic

½ pot flat-leaf parsley

80 g butter

2 tsp hot sauce chilli sauce

½ tsp chilli flakes

1 bag (70 g) grated Parmesan

Coating

½ pot flat-leaf parsley

  1. Rinse the cauliflower, remove the leaves and clean the stem. Slice the cauliflower and spread the slices on baking paper on a tray.

  2. Make the Parmesan butter. Peel and finely chop the garlic. Finely chop the parsley. Add the butter and garlic to a saucepan. Heat until the butter has melted. Add the rest of the ingredients to the saucepan and stir until even. Use a brush to coat the cauliflower with the butter.

  3. Bake in the top rack of an oven at 250 °C for 10 min.

  4. Portion onto plates and garnish with flat-leaf parsley.

Tip: You can also cook the cauliflower on a grill. Grill the slices on a barbecue tray for about 10 minutes, occasionally turning them until the surface is toasted and the inside has slightly softened. Use a brush to coat the cauliflower with the Parmesan butter.
