Goat cheese salad

This goat cheese salad is a festive delight. Crispy pine nuts, a lemony vinaigrette and soft goat cheese are wonderful together.

Ingredients

1 pack (250 g) grapes

1 small red onion

1 bag (100 g) crispy lettuce

1 pack (50 g) rocket

½ bag (50 g) pine nuts

1 pack (200 g) goat cheese

1 tbsp runny honey

½ tbsp rapeseed oil

Vinaigrette

2 tbsp rapeseed oil

1 tbsp lemon juice

1 tbsp runny honey

  1. Mix the ingredients of the vinaigrette.

  2. Wash and cut the grapes in half. Peel and cut the red onion into thin slices. Rinse and dry the lettuce and rocket.

  3. Roast the pine nuts in a dry hot pan until they get a little colour.

  4. Cut 1–1.5cm thick slices of goat cheese at fridge temperature. Brush both sides with honey. Fry in a hot pan in oil for about half a minute on each side. Be careful not to burn the surface.

  5. Assemble the salad in a serving dish. Finish with pine nuts and vinaigrette.
