Rainbow trout stir-fry

The rainbow trout stir-fry is a delicious way to save a busy day. Cold smoked salmon, crème fraîche, lemon and dill give this dish a fresh flavour.

Ingredients

500 g (1 bag) potato-onion mix (frozen)

100 g (1 pack) cold-smoked salmon

1 lemon (organic)

½ pot of dill

1 tbsp rapeseed oil

200 g (1 tub) crème fraîche

a pinch of salt

a pinch of crushed black pepper

  1. Take the potato strips and the salmon to room temperature.

  2. Wash the lemon. Grate the peel and squeeze some juice (1 tsp). Finely chop the dill. Dice the salmon.

  3. Fry the potato strips in oil in a frying pan or saucepan for 5 minutes. Mix the crème fraîche with the potatoes. Cook with the lid on, stirring occasionally, for 10–15 minutes or until the potatoes are cooked.

  4. Mix the salmon cubes with the potatoes. Season with lemon zest and juice, dill, salt and pepper.
