Pan-cooked vegetarian stir-fry

Vegan/vegetable stir-fry is an easy weekday meal. This delicious potato-hash-style dish is quick to make from a potato-and-onion mixture and veggie sausages.

Ingredients

500 g (1 bag) potato-and-onion mix (frozen)

200 g (1 pack) vegetarian sausages

1 bell pepper

½ pot of chives

1 tbsp rapeseed oil

½ tsp salt

You will also need

(mustard, ketchup)

  1. Bring the potato strips to room temperature. Slice the sausages. Rinse the bell pepper. Remove the seeds and dice the bell pepper. Chop the chives.

  2. Fry the veggie sausages in oil in a frying pan or saucepan. Move the sausages to a plate.

  3. Add the peppers and potato strips to the pan. Fry, stirring occasionally, for 10–15 minutes, or until the potatoes are cooked. Mix the sausages with the potatoes. Season with salt and finish with chives. Serve with mustard and ketchup, for example, if you like.
