Lovely Christmas salad
In the Christmas salad, brie cheese is accompanied by roasted pecans and figs. A cherry compote flavoured with thyme will crown the hearty salad.

Ingredients
1 bag (80 g) pecans
1 pkg (200 g) Brie cheese
1 bag (250 g) green salad mix
3 figs
Cherry compote
1 bag (250 g) frozen cherries (Coop)
1 tbsp sugar
1 tbsp water
2 tbsp thyme chopped
Vinaigrette
2 tbsp rapeseed oil
1 tbsp lemon juice
1 tbsp honey
Prepare the cherry compote. Put the frozen cherries, sugar and water in a saucepan. Bring to the boil and cook for about 10 minutes. Mix in the thyme. Cool the compote.
Toast the nuts in a dry pan and crush them after they have cooled a bit. Slice the cheese. If necessary, rinse and dry the salad mix. Rinse and chop the figs.
Mix the vinaigrette ingredients in a bowl.
Assemble the salad, nuts, cheeses and figs on a flat serving platter. Pour the vinaigrette on top. Spoon the cherry compote on top of the salad in dollops.
Tip: You can replace the figs with one pear.
